$25 Dinners: Vegetarian Pizza

Eating healthy doesn't have to break the bank.

Making a pizza at home allows you to cut down on the calories and tailor the meal to each diner’s personal tastes—and it's so easy! Using a prepared dough also cuts down on time. You’ll need about 5 minutes to chop your veggies and between 15 and 20 minutes of baking time.

Ingredients
2 packages of whole wheat pizza dough
2 cups of pizza sauce
1 bag of reduced fat shredded mozzarella cheese
1 cup of mushrooms, sliced
1 cup of red bell peppers, chopped
1 cup of red onion, chopped
½ head of broccoli, chopped
Pam cooking spray

  1. Pre-heat the oven to 400° and spray two cookie sheets with Pam and then spread the pizza dough out until it is an even thickness all the way across.
  2. Spread the pizza sauce over the dough and sprinkle with cheese.
  3. Load the pizzas with the toppings of your choice. Each person can decide how much cheese they like and which toppings they want to include on their portion of the meal.
  4. Place the pizzas in the oven and bake for approximately 15 minutes (until the cheese has melted and the bottom of the dough is a golden brown.)
  5. Serve and enjoy!

*Makes approximately 8 servings of 2 slices each depending on how large you cut your pieces. Each serving is about 220 calories. Cost of meal is around $3.00 per serving.
