$25 Dinners — Grilled Chicken with Pineapple Relish

Eating healthy doesn't have to break the bank.

In the sizzling summer months we often feel too hot to cook, or even eat. Cool off with this quick and easy — and delicious — meal that will have you in the kitchen for 20 minutes or less. Plus, the pineapple and avocado give this dish a warm-weather flavor sure to please even your pickiest eater.

Ingredients
1 box couscous
Cooking spray
1 tsp garlic powder
1 tsp ground cumin
¾ tsp salt
¼ tsp black pepper
4 skinless, boneless chicken breasts
2 cups fresh pineapple, cubed
½ cup corn kernels
1/3 cup red bell pepper, finely chopped
1/8 cup fresh basil, sliced
3 tbl red onion, finely chopped
1 avocado, finely chopped
1 tsp sugar
1 jalapeno pepper, finely chopped (optional)
1 zucchini, chopped
1 lb. green beans
olive oil

  1. Follow the instructions on the box to cook the couscous.
  2. Mix garlic powder, cumin, ½ tsp salt and pepper and then sprinkle over the chicken breasts.
  3. Coat a grill pan with the cooking spray and cook the chicken about 8 minutes on each side or until done.
  4. While the chicken is cooking, place the zucchini and the green beans on a cookie sheet, drizzle with olive oil and sprinkle with garlic salt and black pepper. Bake about 8 minutes at 350 degrees. 
  5. Meanwhile, combine the remaining salt, pineapple, corn, bell pepper, onion, basil, avocado and sugar (with the optional jalapeno) in a large bowl. Mix thoroughly.
  6. Serve the relish over the chicken and couscous with a side of baked veggies and enjoy!

Recipe makes about four servings, approximately 260 calories each.Cost of meal is about $4.30 per serving.
